Ingredients:

- 1 cup milk
- 1 egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions:
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt
In another bowl, whisk together the milk, egg, melted butter, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Don't overmix; some lumps are okay
Preheat a non-stick skillet or griddle over medium-high heat and lightly grease it with butter or cooking spray
Pour 1/4 cup of the pancake batter onto the hot skillet for each pancake
Cook until bubbles form on the surface, and the edges start to look set, about 2-3 minutes
Flip the pancakes and cook for another 2-3 minutes or until golden brown and cooked through
Remove the pancakes from the skillet and keep them warm while you cook the remaining batter
Serve the Pam-Cakes hot with your favorite toppings like syrup, fresh fruit, or whipped cream
